Bob’s Apple Nut Spice Cake for the Holidays

I created this recipe myself—turned out pretty good, I think. I based it on a recipe for Pumpkin Cake recipe I created, based on a Vanilla Cake recipe I got off the Internet, then substituted with healthy ingredients.

¾ cup eggbeaters
2 cups Splenda sugar substitute
1 tsp Nutmeg
2 tsp Cinnamon
2 tsp. Vanilla
2/3 cup Canola Oil
1 cup skim milk
1 cup unsweetened applesauce
1 cup chopped pecans
1 cup golden raisins or one large apple, diced
3 cups whole wheat flour
1/2 cup almond flour
1/2 cup rolled oats
3 tsp baking powder

Mix eggs, Splenda, oil, nutmeg, vanilla and cinnamon. Stir in milk. Stir in applesauce, nuts and raisins/apple. Stir in whole wheat flour, almond flour, oats and baking powder. When mixed, pour into a greased cake pan. Bake at 355 degrees for 65 minutes, or until a knife comes out clean. Allow to cool for ten minutes before cutting to serve.
